Chicken and Green Bean Stir-Fry

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 1 tablespoon olive oil
  • 1 lb. fresh green beans, trimmed and cut in half
  • 4 green onions, sliced, white and green parts separated
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 4 cups cooked white rice
  • 1/4 cup chopped cashews or peanuts

Directions

  1. Heat olive oil in a skillet over medium-high heat. Add green beans and cook until softened, about 4-5 minutes.

  2. Add Heritage Shaved Chicken and cook until lightly browned, about 5 minutes. Add white parts of green onions, garlic, ginger, salt, pepper and crushed red pepper flakes, stirring until fragrant, about 1 minute. Add soy sauce, rice vinegar, sesame oil and honey, stirring to coat, about 1-2 minutes. Remove from heat.

  3. Divide rice among 4 serving bowls and top evenly with stir-fry mixture. Garnish with green parts of green onions and cashews or peanuts. Serve and enjoy.
