Cheesy Chicken Breakfast Casserole

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 1 tablespoon olive oil
  • 1/2 medium yellow onion, finely diced
  • 1 bell pepper, diced
  • 8 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • 2 cups frozen tater tots
  • Chopped fresh herbs parsley, for garnish

Directions

  1. Preheat oven to 375°F. Lightly grease 9×13-inch baking dish with cooking spray and set aside.

  2. Heat oil in a large skillet over medium heat. Add onion and pepper and cook until softened, about 4-5 minutes. Add Heritage Shaved Chicken Breast and cook until lightly browned, about 5 minutes. Remove from heat and set aside to cool.

  3. Whisk together eggs, milk, salt, pepper, garlic powder and paprika in a large bowl until combined.

  4. Add chicken mixture and cheese to egg mixture and stir until all ingredients are evenly distributed. Transfer mixture to prepared baking dish. Arrange tater tots evenly over top of egg mixture.

  5. Bake until eggs are set and tater tots are golden-brown, about 35-40 minutes.

  6. Remove from oven and let cool slightly. Garnish with parsley and serve.
