Thanksgiving Chicken Sub
Here’s one for the the non-turkey eaters on Thanksgiving day!
Ingredients
- 2 14oz. packages of Heritage Shaved Chicken Breast
- Kosher salt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh sage
- 2 teaspoons chopped fresh thyme
- Kosher salt and freshly ground black pepper, to taste
- 4 cups packed baby spinach
- 4 cups leftover stuffing
- 2 cups leftover homemade or store-bought cranberry sauce
- 4 sub rolls, split and toasted
Directions
- In a large skillet over medium-high heat, heat oil. Add garlic, and cook until fragrant, about 30 seconds. Add Heritage Shaved Chicken Breast, sage and thyme, and cook, stirring occasionally, until thoroughly cooked, about 7-10 minutes. Season with salt and pepper, to taste.
- Layer spinach, chicken mixture, stuffing and cranberry sauce evenly between each roll. Serve and enjoy.
