Chicken Enchilada Skillet

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 1 tablespoon olive oil
  • 1 1/2 cups red enchilada sauce
  • 4 8-inch flour tortillas, cut into thin strips
  • 1 cup shredded Mexican-blend cheese
  • Sliced radishes, for garnish
  • Sliced jalapenos, for garnish
  • Sour cream, for garnish
  • Chopped fresh cilantro, for garnish

Directions

  1. Preheat oven to 375°F. Heat oil in a large oven-safe skillet over medium heat.

  2. Add Heritage Shaved Chicken and cook until lightly browned, about 5 minutes.

  3. Add enchilada sauce, stirring to coat chicken. Let sauce simmer until slightly reduced, about 5-7 minutes.

  4. Remove from heat and top evenly with tortilla strips and cheese. Bake until the cheese is melted and bubbling, about 10-12 minutes.

  5. Remove from oven and let cool. Garnish with radishes, jalapenos, dollops of sour cream and cilantro, and serve.
