One-Pot Chicken Noodle Soup
Warm up with the comforting simplicity of this timeless, soul-soothing dish.
Ingredients
- 1 14oz. package of Heritage Shaved Chicken Breast
- 1 tablespoon olive oil
- 2 medium carrots, cut into 1/4-inch rounds
- 2 stalks celery, cut into 1/4-inch rounds
- 1 medium yellow onion, chopped
- 7 cups low-sodium chicken broth
- 2 dried bay leaves
- 1 teaspoon dried thyme
- 1 8 oz. package extra-wide egg noodles
- Kosher salt and freshly ground black pepper, to taste
- Chopped fresh parsley, optional
Directions
- In a large pot over medium heat, heat oil. Add carrots, celery and onion and cook, stirring occasionally, until tender, about 5-8 minutes.
- Add broth, bay leaves and thyme and bring to a boil over medium-high heat. Reduce heat to a simmer. Stir in Heritage Shaved Chicken Breast and noodles, and cook until noodles are tender and chicken is cooked thoroughly, about 7-10 minutes. Season with salt and pepper, to taste. Discard bay leaves.
- Divide soup between bowls and top with parsley. Serve and enjoy.
