One-Pot Chicken Noodle Soup

Warm up with the comforting simplicity of this timeless, soul-soothing dish.

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 1 tablespoon olive oil
  • 2 medium carrots, cut into 1/4-inch rounds
  • 2 stalks celery, cut into 1/4-inch rounds
  • 1 medium yellow onion, chopped
  • 7 cups low-sodium chicken broth
  • 2 dried bay leaves
  • 1 teaspoon dried thyme
  • 1 8 oz. package extra-wide egg noodles
  • Kosher salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, optional

Directions

  1. In a large pot over medium heat, heat oil. Add carrots, celery and onion and cook, stirring occasionally, until tender, about 5-8 minutes.
  2. Add broth, bay leaves and thyme and bring to a boil over medium-high heat. Reduce heat to a simmer. Stir in Heritage Shaved Chicken Breast and noodles, and cook until noodles are tender and chicken is cooked thoroughly, about 7-10 minutes. Season with salt and pepper, to taste. Discard bay leaves.
  3. Divide soup between bowls and top with parsley. Serve and enjoy.
