Mediterranean-Style Chicken Salad

Heritage Shaved Chicken Breast nestled atop crisp lettuce and adorned with cherry tomatoes, olives, feta, cucumbers, and onions, all drizzled with a refreshing lemon dressing.

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 1/4 cup, plus 1 tablespoon olive oil, divided
  • 1/2 lemon, juiced
  • 3 cloves garlic, minced, divided
  • 1 tablespoon chopped fresh oregano, divided
  • Kosher salt and freshly ground black pepper, to taste
  • 3 romaine lettuce hearts, cut into 2-inch pieces
  • 1 pint cherry tomatoes, halved
  • 2 cups pitted kalamata olives, halved
  • 1 cup crumbled feta cheese
  • 1/2 English cucumber, sliced
  • 1 small red onion, thinly sliced

Directions

  1. In a small bowl, whisk together 1/4 cup olive oil, lemon juice, 1 garlic clove and 1 teaspoon oregano until combined. Season with salt and pepper, to taste. Set aside.
  2. In a large skillet over medium-high heat, heat remaining oil. Add remaining garlic, and cook until fragrant, about 30 seconds. Add Heritage Shaved Chicken Breast and remaining oregano, and cook, stirring occasionally, until thoroughly cooked, about 7-10 minutes. Season with salt and pepper.
  3. Divided lettuce between 4 bowls. Top with chicken mixture, cherry tomatoes, olives, feta, cucumbers and onion. Drizzle with lemon mixture, and serve.
