BBQ Chicken Sweet Potato Boats

A mouthwatering fusion of smoky barbecue chicken, melted cheese, nestled within a perfectly baked sweet potato, creating a delicious and satisfying dish.

Ingredients

  • 1 14oz. package of Heritage Shaved Chicken Breast
  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 small red onion, chopped
  • Chopped fresh parsley, for garnish, optional

Directions

  1. Preheat oven to 425°F and line a baking sheet with aluminum foil. Prick sweet potatoes with fork. Bake until potatoes are tender and fork inserted easily comes out, about 45-50 minutes. Split the tops of sweet potatoes open with a knife. Set aside.
  2. In a large skillet over medium-high heat, heat oil. Add Heritage Shaved Chicken Breast and cook, stirring occasionally, until light golden-brown, about 6 minutes. Stir in barbecue sauce, and continue to cook until chicken is thoroughly cooked and coated, about 1-4 minutes.
  3. Top potatoes with chicken mixture, cheddar cheese, a dollop of sour cream, red onion and parsley. Serve and enjoy.
