Air-Fryer Chipotle Steak Fajitas

A delicious twist to a classic Tex-Mex favorite, combining perfectly seasoned and air-fried chipotle-infused steak strips with colorful bell peppers, avocado and onions for a quick and flavorful meal.

Ingredients

  • 1 12oz. package of Heritage Ribeye Steak Strips
  • 1/4 cup, plus 1 tablespoon olive oil, divided
  • 1 lime, juiced
  • 3 chipotles in adobo sauce, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon kosher salt
  • 1 red onion, sliced
  • 1 each red and green bell pepper, sliced
  • 12 6-inch flour tortillas
  • 2 cups shredded Mexican-blend cheese
  • 3 plum tomatoes, seeded and chopped
  • 2 avocado, halved, pitted, peeled and sliced

Directions

  1. In a resealable plastic bag, combine 1/4 cup olive oil, lime juice, chipotles, garlic and salt. Add Heritage Ribeye Steak Strips and massage the mixture into steak to cover completely. Marinate at room temperature for at least 30 minutes, or refrigerated up to 6 hours or overnight. Discard marinade.
  2. Preheat air-fryer to 390°F. In a large bowl, combine onion, pepper and remaining oil, and toss to coat. Season with salt and pepper. Place vegetables in a single layer in air-fryer basket. Cook, 3-5 minutes, until crisp-tender.
  3. Add steak in a single layer overtop of the vegetables, and cook until golden-brown and thoroughly cooked and vegetables are tender, about 5-7 minutes.
  4. Top tortillas with steak and vegetables, cheese, tomatoes and avocado. Serve and enjoy.

Ready in: 27 minutes (plus marinating time)
